Ecuador is home to the first known cacao trees on earth. The variety called “Nacional” traces its genetic lineage as far back as 5,300 years. In the 1800’s it was considered by many European chocolatiers the most prized cacao in the world. Then in 1916 an outbreak of Witches’ Broom disease decimated the variety and a century of hybridization followed. Today genetically pure “Nacional” is on the brink of extinction. In the valley of Piedra de Plata some of the last survivors continue to grow. To’ak hand-selects cacao that matches the morphological and color profile of heirloom Nacional referenced from DNA testing. Sourced exclusively from Piedra de Plata.
